A Cinco de Mayo feast is one of the easiest last minute parties you can put together. You need homemade salsa, a Mexican dish, margaritas if you are a drinker and some Latin tunes in your IPOD and viola ...instant fiesta. I live in Arizona which borders Mexico so you know we have tons of authentic and awesome Mexican restaurants but today I will make homemade salsa...which is quite easy to do and so much better than the store bought kind. Cinco de Mayo has become an Americanized fiesta just like St. Patrick's Day....replacing margaritas for green beer. Commemorative of Mexico's victory over France in the battle of Puebla, Cinco de Mayo gives us all a perfect excuse to make some wonderful Mexican dishes and have a fiesta in the middle of the week!
