Last Minute Cinco De Mayo Fiesta

Today is Cinco De Mayo...so you think it's too late to have a little fiesta of your own! NEVER!!! Here are some quick, easy recipes and an activity to do with the kiddos.
Quick Guacamole 2 large avocados, mashed
1 tablespoon lime juice
1/3 cup think n' chunky salsa
Tortilla chips

1. Mix avocados, lime juice, and salsa in mixing bowl.
2. That's it...eat with chips!
Tijuana Caesar Salad This recipe I got from my handy dandy Betty Crocker cookbook. I love her...is she or was she real?
Cooking spray
6 Old El Paso® flour tortillas (6 inches in diameter)
1 teaspoon garlic salt
1 teaspoon ground cumin or chili powder
2/3 cup Caesar dressing
4 teaspoons grated lemon peel
2 tablespoons fresh lemon juice
12 cups bite-size pieces romaine (12 ounces)
8 ounces jicama, peeled and cut into cubes (2 cups)
2 medium red bell peppers, cut into thin strips (2 cups)
1/2 cup shredded Parmesan cheese

(I make this all the time but can't say I've ever put the jicama in it....do you have jicama laying around the house?)
1. Heat oven to 375ºF. Spray 2 cookie sheets with cooking spray. Spray tortillas lightly with cooking spray. Sprinkle with garlic salt and cumin. Cut each tortilla in half, then crosswise into 1/2-inch strips. Place tortilla strips on cookie sheets. Bake each cookie sheet 7 to 9 minutes or until crisp.
2. Mix dressing, lemon peel and lemon juice. Toss romaine, jicama, bell peppers, cheese, tortilla strips and dressing mixture in large bowl. Sprinkle with additional shredded Parmesan cheese if desired. Serve immediately.
Taco Soup

I am one busy momma so anytime I can make a meal in a crock pot I'm all about it. Here is a super easy and good one!
2 lbs ground beef, cooked, drained, and crumbled
1 small onion, chopped
2 cans of chili beans, regular size cans
1 can of whole kernel corn, do not drain
1 can of rotelle tomatoes
1 can of cream of mushroom soup + 1 can of water
2 pkg. taco seasoning mix
Put all ingredients into a crock pot. Cook on low for about 4 hrs. This may be topped with sour cream and/or cheddar cheese.
Or this can be put on and let simmer all day.
Mexican Confetti Eggs or Cascarones

Need:
Uncooked eggs
Confetti, candy or small toy/trinket
Assorted colored tissue paper

How to do it:
1. Punch a hole the size of a quarter in end of each egg. Drain out contents (make egg salad-lol); rinse and let dry.
2. Fill each egg half full with confetti, candy or small toy. Cut i-inch squares of tissue paper or just rip it like I do. Glue to egg shell, covering hole and entire egg.

It's fun to crack over head....if using confetti...it's really fun for the kiddos...not as much fun for mommy at clean up time.

  1. I make my guacamole like that all the time...so easy and so good! I don't have jicama around the house often, but I do like it.

  2. If I was at my parent's house there would be jicama... my dad loves that stuff! Great recipes! I actually have an even easier one for tortilla soup... a whole bunch of canned veggies/beans/meat poured into a pot on the stove for about 30min! It's great, fast, and everyone loves it.
